I had an incredible time this past weekend with my brother and his wife. I made them Bistec a la Mexicana. Now, my brother absolutely loves Mexican food now that I cook it all the time, so does my father actually...but, I digress. Anywhoo, I was really a little nervous about it because I always add my own extra ingredients to make it a little bit more flavorful, but my husband Teo wanted them to have authentic Bistec a la Mexicana along with some not-so-spicy enchiladas for my sister in law. He made sure I did everything just right. He kept looking over my shoulder and saying "no uses ninguna comida Americana ey?" Which means don't use any American food period. Little did he know, I just had to slip a little bouillon cube in the rice to add some flavor to it. As they lifted their spoon to take the first bite, Teo and I leaned over them and looked on intently, trying to see their reaction to eating authentic Mexican food. And needless to say, it was a hit! They loved every drop of it.&amp;nbsp; I like inviting the Hispanic in laws over to have Soul Food and my Black American family over for Mexican. Try it some times with your own family, and don't be afraid to add your own touch to it. Never ever...in your entire life....eat chiles rellenos and chocolate. My stomach is used to eating spicy food now, since I have to cook it almost everday for Teo, my Mexican husband. I know that chiles rellenos is his favorite food in the world so I decided to make up a batch last night that I paired with Mexican fried rice and beans. This morning, I still had some left over so I ate 5 of them for lunch, and boy were they spicy! Afterwards, I ate my favorite chocolate bar, which is Hershey's with Almonds. Chiles rellenos meets chocolate....ugh no, that's a don't. I just had 40 minutes of THE worst bathroom experience thinkable. I'm not sure, but I think it might have been worse than labor pains or at least equal. It's just not a good idea to mix some American foods with Mexican foods unless you know what you are doing. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;Don't know if you still want it, but here is Teo's family recipe of Veracruz style chiles rellenos. Poblano chiles are not used in Veracruz, they use jalapeños!&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;span style="font-size: large;"&gt;&lt;b&gt;&lt;span style="color: red;"&gt;The Filling&lt;/span&gt;&lt;/b&gt;&lt;/span&gt;&lt;/div&gt;&lt;span style="font-size: large;"&gt;In a pot, stew potatoes, 1 onion, 1 tomato (green) oregano, cumin, and chicken until the chicken can be shredded apart easily. (In Mexico they boil everything together, I stew it instead) mix altogether and add platano macho (sort of like bananas) and queso fresco. Then set aside. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;div style="color: red; text-align: center;"&gt;&lt;b&gt;&lt;span style="font-size: large;"&gt;The Chiles&lt;/span&gt;&lt;/b&gt;&lt;/div&gt;&lt;span style="font-size: large;"&gt;You can do them two ways: you can boil them or roast them. We roast them which makes them even more hot. Cut your jalapeños at the top and scoop out all of the seeds and veins with a small knife. Then put them on a black skillet in the oven on the top grill with the oven set on broil. Roast them on all sides until they are black. Take them out and put them in a plastic bag and let them sweat and cool.  &lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;Now heat your oil to medium high&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;div style="color: red; text-align: center;"&gt;&lt;b&gt;&lt;span style="font-size: large;"&gt;The Egg-Meringue Like Coating&lt;/span&gt;&lt;/b&gt;&lt;/div&gt;&lt;span style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;Don't beat the eggs until you are almost ready to fry them. Take 2-3 eggs and separate the white from the yolk. (you need two bowls for this) Beat the yolk and set aside. Then with an electric beater set on high, whip your eggs whites until stiff just as if you are making meringue. Then you add just a tablespoon of the eggs whites into your yolk mixture, then pour the egg yolk mixture into the egg white mixture. It seems like an extra step, but it must be done, or it just does not turn out right. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;Now remove your chiles from the plastic bag and peel off the charred skin. Coat them in flour, dip them in your egg mix, make sure the egg whites coat all sides, and then put them in the oil. There you will find an extensive list of sites that offer recipes for Latin cooking.&lt;br /&gt;Also, it is good to stock up on Hispanic or Latin spices. One can find a hefty selection of these spices just by visiting the local tienda or Wal-Mart, which has a huge section of Latin foods. Once you have all of your spices and foods, use the recipes that you have found on Google and follow them verbatim. This works. Trust me. It is also a clever way of impressing your spouse and his family with your culinary skills.&lt;br /&gt;Hispanic cooking tools and utensils are also a must have for efficiency in the kitchen. What is causing the rise in the number of Black and Hispanic couples we see, and how is the Black/Latino love connection being made? I think most men like a clean house. Most Mexican men do want you to maintain a clean home. The one thing that I have found is that Mexican men are very willing to help you clean the home especially if they see that you are overwhelmed, which is quite different from many American Black men. I guess that is if you are fortunate enough to have that kind of man. In the case that you don't, I would suggest explaining to him that you'll do the best that you can, but that it will be challenging for you since you guys have small kids in the home. Perhaps you can try making out a schedule so that you can get up before the little ones awake or stay up a little later at night. Both times work best for me. In the real Mexican restaurants we get LOTS of looks...not really dirty, but curious. I guess it depends on the area in which you live. One person told me that she gets dirtier looks more from Mexican American and Puerto Rican women when she is with her Latino man more than any other type. But, it goes both ways. I have a lot of my Hispanic girlfriends who tell me that they get a lot of dirty looks from Black women when she is with her black man. The experiences seem to be different for everyone. So how would you handle dirty looks? I guess the short answer for me is to look straight ahead or to focus the attention on your spouse instead of the "others". We also make it a habit to pay more attention to one another  instead of  tuning into who might be staring or making comments. I have spoken to him in Spanish almost exclusively since he was born and so does his father. My daughter who is 14 from a previous marriage is also bilingual, and she chooses to speak to her brother in mostly English. He has also figured out that I am not a native speaker, and now he hates speaking to me in Spanish. When his father is home he speaks Spanish exclusively. My goal was for him to learn Spanish first until age 3 and now I am saying everything twice once in English and once in Spanish.&lt;br /&gt;&lt;br /&gt;I chose this way because obviously he would know and learn English since his sister has spoken to him almost exclusively in English since birth. I just did not want him to have to "learn" Spanish. If you want to raise your children to speak both English and Spanish the recommendation is that one parent speak exclusively Spanish and the other exclusively English. Also, it would be good to join some bilingual forums. This is what I did when my son was first born. The goal is for him not to just understand Spanish when it is spoken to him, but to really know it. My daughter&amp;nbsp; has been "learning" Spanish since age 7, and she speaks it and understands it fluently. The new movie "Our Family Wedding" starring America Ferrera and Lance  Gross is indicative of that fact. The movie depicts two very strong  family heads trying to cope with the shock of their children marrying  interracially. Lucia is a Latina and Marcus is African American. In  reality Black and Hispanic couples are not a new type of relationship.  Ever since Latinos and Blacks have lived in the same neighborhoods and  barrios one will find couples of this mix. What is new is the frequency  of which we are seeing Black and Latino couples dating and marrying.  What is causing the rise in the number of Black and Hispanic couples we  see, and how is the Black/Latino love connection being made? The answers  are as simple as they are complicated.&lt;br /&gt;&lt;br /&gt;The Rise in Hispanic and  African American Dating and Marriage&lt;br /&gt;&lt;br /&gt;The most fundamental reason  for the increase in Black and Hispanic relationships is that Hispanic  Latino presence in the U.S. is greater than ever before. These numbers  have increased tremendously since 1960. According to the Pew Research  Center Latinos account for half of the population growth since 2000 with  an estimated number of 44,852,816 in the U.S as of 2010, and this  number does not include the almost 4 million Puerto Ricans residing here  already. Many Hispanic Latinos who have arrived in this country are  between the ages of 20-40, they are single, unattached, and they are  more open to dating interracially than their parents or grandparents.  This also opens a new market for Black women who have not ever  considered dating interracially. Another popular mix is Black men and  Hispanic females. The number of Black men dating and marrying Latinas is  ever more increasing.&lt;br /&gt;&lt;br /&gt;Black Latino Love Connection&lt;br /&gt;&lt;br /&gt;Blacks  and Hispanics who speak English are meeting and making love connections  in various ways, such as on the job and in the neighborhoods or barrios.  They are also meeting in Salsa clubs and other singles bars, as well as  in grocery stores and other retail establishments. In some Black and  Hispanic relationships there is a bit of a language barrier. Many of  these relationships are starting with out being able to communicate  verbally at all at first. In the beginning stages of dating, many Black  and Hispanic Latino couples have reported using hand gestures and signs  to communicate, and yet, they were able to understand each other  perfectly. Many couples reported heightened levels of passion in these  relationships. In a short time, many Blacks have learned to speak  Spanish and many Hispanics have learned to speak English and fluently.  Many Black and Latino couples are thriving in loving healthy  relationships.&lt;br /&gt;&lt;br /&gt;No doubt with the new release of "Our Family  Wedding" and last year's "I Can Do Bad All by Myself" both depicting  love between African American and Hispanics, we will begin to see an  even bigger trend in the near future. I do this every morning at 4 am. Yesterday, my husband told me that 3 of the guys from his work asked to try one of the tacos (they always trade tacos). Upon tasting them, they asked, "can she make us some? We will buy the meat and pay her to prepare lonches for us too?" I thought...ok. I guess I could. Anyway, I made the taco with a Teriyaki chicken filling. This is a little bit different for Mexican taste buds, as most do not like meat that is dulce (sweet). But they loved this. I do not have exact measurements for this. I cook a lot of soul food so I do not measure. I just know how much I want in there. You have to season this recipe to taste.&lt;br /&gt;here is the recipe:&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;Pechugas de pollo (chicken breasts)&lt;br /&gt;onions/cebolla&lt;br /&gt;chile Jalapenos&lt;br /&gt;Teriyaki Sauce (I use lots of this sauce)&lt;br /&gt;Soy Sauce (only a little of this)&lt;br /&gt;1 tablespoon of sugar&lt;br /&gt;Mayo&lt;br /&gt;Tortillas&lt;br /&gt;Soul Food Seasoning or Seasoning Salt&lt;br /&gt;Onion Powder&lt;br /&gt;Black Pepper&lt;br /&gt;Sazon Goya con culantro y achiote&lt;br /&gt;Directions/Direcciones&lt;br /&gt;&lt;br /&gt;Filling&lt;br /&gt;In a pot, add 1 tablespoon of oil. Prep your chicken. Add soy sauce and teriyaki sauce first. Then add the spices (soul food seasoning or seasoning salt, onion powder, sazon goya con culantro y achiote, black pepper) cook on low until everything cooks down. The aroma is nice. This has lots of flavor.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Tortillas&lt;br /&gt;heat tortillas (in a comal or on the eye of the stove) add mayo (mayo sounds weird, but it helps the meat to stick and it adds a good flavor) then add the meat filling and fold. Then stack them on white sandwich paper in fours and wrap in aluminum foil. In a separate plastic bag, add pico de gallo: chopped onion, chiles, and tomato marinated in lemon for them to add to the taco at lunch time. Don't forget a napkin and semi frozen sangria to drink.&lt;br /&gt;&lt;br /&gt;Breakfast Ideas&lt;br /&gt;Breakfast this morning was Tacos de Salchichas con cebolla y chile&lt;br /&gt;Ingredients&lt;br /&gt;corn tortillas&lt;br /&gt;hot dogs (turkey oscar meyer)&lt;br /&gt;onions/cebolla y chile&lt;br /&gt;jalapeno&lt;br /&gt;aceite/oil&lt;br /&gt;mayonesa/mayonnaise&lt;br /&gt;directions/direcciones&lt;br /&gt;With a small amount of oil, fry 3-4 oscar meyer turkey hot dogs with chopped onion and 1 jalapeno. Fry until it is all caramelized together. Heat your tortillas en a comal or on top of the stove, after add mayonnaise to them and add the hot dog filling. Fold over once. On wax paper stack them in threes or fours. Wrap in aluminum foil.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Dinner ideas&lt;br /&gt;I love to blend Mexican and Soul Food recipes together to make an eclectic dinner table.&lt;br /&gt;My favorite Mexican and Soul food dishes.&lt;br /&gt;&lt;br /&gt;Esquite (Mexican corn on the cob)(Here in the U.S.) Corn on the cob rolled in mayonnaise, hot sauce, and then parmesan cheese.(in Mexico) they use loose kernels in a cup marinated in lime, green Jalapeño sauce, and cheese.&lt;br /&gt;&lt;br /&gt;Collard Greens topped with a homemade Jalapeño salsa, macaroni and cheese, and pork tacos &lt;br /&gt;&lt;br /&gt;Tuesday, April 21st Menu&lt;br /&gt;Ok so last night I made a really good dinner. You know I am always trying to find away to blend both the Soul Food cuisine to Mexican cuisine lol. Anyway, the recipe was Fried Chicken in Salsa Verde and it was absolutely delicious. Teo loved the dish. He had never had the two together. I don't what made me think of it. I guess I applied the same Soul Food cooking logic to the recipe...you know...cooking from the soul. Anyway it was a success. So thumbs up for me. Here is the recipe. I don't have exact measurements for you. You basically have to season it to taste. So here it goes.&lt;br /&gt;&lt;br /&gt;Fried Chicken in Salsa Verde&lt;br /&gt;&lt;br /&gt;You can use any part of the chicken. You can use thighs if you need to make a really cheap recipe or you can use chicken breasts. I have tried it both ways and believe it or not Teo liked it better with thighs since he is more accustomed to eating thighs instead of breasts. Lucky for us, it is a really cheap dish this way if you have to feed a family of four. But I digress. &lt;br /&gt;&lt;br /&gt;Ingredients Needed&lt;br /&gt;&lt;br /&gt;Chicken&lt;br /&gt;Salsa Verde (I make it from scratch when I have time and sometimes I use the one in the jar.)&lt;br /&gt;1-2 packets of Sazon Goya con azafran &lt;br /&gt;Black Pepper&lt;br /&gt;Oil&lt;br /&gt;Flour and meal (equal parts) &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;Coat the chicken with just black pepper and equal parts of flour and meal. Next, deep fry the chicken on both sides until golden brown and almost done in the middle. Take it out and drain and add Sazon Goya con Azafran. In another pot add a half jar of Salsa Verde. Then add your chicken pieces. Turn them over on both sides so that they are fully coated with the salsa. Cook on low for about 1 hour until very tender. You can serve this with Mexican rice and tortillas on the side.
